Greek Salad Whole Wheat Wraps

Greek salad whole wheat wraps are packed with tomatoes which are rich in vitamins, antioxidants, and a good source of dietary fiber; cucumbers are rich in B vitamins and fiber; chickpeas are rich in protein, fiber, vitamins, and minerals; olives contain mono saturated fat which increases good cholesterol; lastly, onions are rich in vitamin C. All in all, this is the clean eating alternative of feta wraps.

Ingredients:

¼ cup of extra virgin olive oil
¼ teaspoon of iodized salt
¼ cup of Kalamata olives, sliced, pitted
¼ cup of silvered red onion
¼ teaspoon of black pepper, grounded
1/3 cup of red wine vinegar
1 cucumber, halved, sliced
1 cup of cherry/grape tomatoes, halved
2 tablespoons of oregano, chopped
6 pieces of 8-9 inch whole wheat wraps
8 cups of romaine lettuce, chopped
15 ounce of chickpeas, reduced sodium

Instructions:

1. Using a bowl, pour vinegar, oil, add oregano, then dash in salt and pepper; whisk together.
2. Add chickpeas, olives, tomatoes, cucumbers, and red onions; toss till fully combined.
